Shrimp Salad with Green Onion and Goat Cheese Dressing

Chris made me the most delicious salad for dinner last night. We had shrimp salad with green onion and goat cheese dressing and it was to die for. Since I’m still sorta kinda on a health kick, this was a healthy dinner choice with a protein amongst lots and lots of greens! You are going to want to try this one, especially if you’re a goat cheese lover like me!

Shrimp and Goat Cheese Salad


Ingredients for Dressing:

1/2 cup extra virgin olive oil

1/2 cup crumbled soft goat cheese

1/4 cup red wine vinegar

2 teaspoons  lemon zest

juice from 1/2 lemon

2 tablespoons chopped fresh chives

2 tablespoons chopped fresh green onions

salt and pepper to taste

For Salad:

18- 24 large shrimp (about a pound)

8 ounces fresh arugula

lemon slices to garnish

To Make Dressing:

  • whisk all of the dressing ingredients together in a medium bowl and set aside

To Make Salad:

  • Fill a large bowl halfway with cold water and some ice cubes, set aside
  • Fill a large pot 3/4 full of salted water and bring to a boil
  • Add shrimp and boil for about 3 minutes, or until bright pink and tender
  • Drain and pour shrimp into ice water for a few minutes
  • Drain and cut up shrimp into 1/2 inch pieces
  • Add shrimp to dressing and mix well
  • Fix salad bowl with arugula and add shrimp on top
  • Garnish with lemon slices

Salad Dressing

This salad is so yummy because of the delicious dressing. It’d be great for a picnic, a spring or summer dinner on the deck or anytime really! Did I ever tell you how much I love goat cheese? Well, it’s true. I love goat cheese! Let me know what you think of this yummy salad when you give it a whirl! I know we’ll be having it again and again!
