Chris and I have been drinking water, making better choices about what we eat and trying to live a healthier lifestyle for the past three weeks. So far so good. We’re both in better moods, sleeping better, have healthier looking skin and Chris has already lost about 8 lbs. Me, well, I never got on the scale to begin with, BUT I feel better – and that’s really all that matters. Hopefully we can keep this thing going. It’s funny because I used to look forward to a glass of wine after putting the kids to bed; now it’s yogurt!
We’ve been eating lots of veggie burgers, salads, hard boiled eggs, fish and steak. We’re consuming hardly any bread. Yesterday, I decided to search Google + for “Clean Eating” and came across this pretty little salad by Sherri from To Simply Inspire. I thought it would be the perfect dinner salad for Chris and me to try. Plus, it’s cheap and simple to make. Chris decided to tweak the recipe a little and even made the homemade balsamic vinaigrette dressing. YUM!
- one package of Perdue precooked diced chicken
- one can of chick peas, drained and rinsed
- 2 avocados, diced
- 1/2 cucumber, diced
- 2 tomatoes, diced
- 1 TSP of goat cheese crumbles, optional
- Balsamic Vinaigrette Dressing
- Mix it all together for one easy, scrumptious salad!
This salad was absolutely delicious. I’m not even a fan of tomatoes on the regular, and I devoured this bowl of goodness. Thankfully, there were leftovers and my lunch salad will most likely be calling my name around noon time. Guys, you MUST try this salad. It is so delicious. You will LOVE IT!
